- ¼ cups olive oil
- ½ onion (finely chopped)
- 2 cloves garlic (or 1 teaspoon garlic powder)
- 3 tbsp flour
- 3 tbsp chili pepper flakes (you can reduce the spiciness according to your taste)
- 1 cup tomato (chopped small)
- 2 cups hot water (or chicken broth)
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp cinnamon
- Salt and black pepper (add to taste)
Chop the garlic and onion finely.
Heat the oil in a medium sized pot and start sautéing the onion and garlic.
When the onions start to change color, add the flour and continue to saute for 30-40 seconds until the smell comes out.
Add the tomatoes that you peeled and chopped into small pieces.
Add the spices and hot water or chicken stock and mix.
When it starts to boil, reduce the heat and cook for 10 minutes.
Make the final touch by adding salt and pepper to your taste.
