Fried rice is one of the most delicious and practical dishes of Far Eastern cuisine and a perfect solution for using up leftover rice.

Ingredients
  

  • 2 tbsp oil (preferably sesame oil)
  • 2-3 garlic cloves (finely chopped)
  • ¼ onion (chopped)
  • ½ carrot (chopped)
  • 2 eggs
  • 1 pinch Salt and black pepper
  • 2 cups cold cooked white rice
  • 3 tbsp soy sauce
  • ½ tsp sugar
  • 1 medium scallion (chopped into 1 inch thick pieces)
  • 1 tsp toasted sesame seeds

Instructions
 

  • First of all, prepare the onion, garlic and carrot by finely chopping them.
  • Heat a large skillet over medium heat and add the oil.
  • Add the garlic and onion and fry for 30-40 seconds. Then add the carrot and sauté for a few more minutes.
  • Move all the ingredients to one side of the pan.
  • Break the eggs in a bowl, add salt and pepper and beat.
  • Pour the egg into the empty part of the pan. Cook, stirring constantly.
  • When the egg is cooked, mix all the ingredients and add the rice to the pan.
  • Add soy sauce and sugar. Mix all the ingredients well.
  • Check the salt before removing from the heat, add more if necessary.
  • Turn off the stove. Add the fresh onion that you have chopped into 1-2 cm thick pieces and mix.

Notes

You can add different ingredients to this recipe if you want. Peas or chicken, meat etc. also go well. It is a dish made by using previously cooked rice rather than freshly cooked.
