How to Make Crepes

Ingredients
  

  • 1 cup milk (200ml)
  • ½ cup flour (60 g, 4 tbsp)
  • 1 tbsp melted butter or oil
  • A pinch of salt
  • 1 tbsp sugar or sweetener (optional)
  • 1 tsp vanilla (optional)

Instructions
 

  • Break the egg into a large mixing bowl. Add sugar and a pinch of salt. Beat with a whisk until the mixture becomes frothy.
  • Add the milk little by little to the whipped mixture while continuing to whisk. Then slowly add the flour and mix to avoid lumps. If you wish, you can add the vanilla at this stage.
  • Add the melted butter or oil to the mixture and mix until you have a smooth dough. The dough should be fluid but not too watery.
  • Heat a medium-sized pan over medium heat. Grease the pan with a little butter or oil.
  • Using a ladle, pour the batter into the pan. Gently move the pan to spread the batter into a thin and even layer. Cook the crepe over medium heat until the bottom surface turns golden brown, for 40-45 seconds. Then, using a spatula, carefully turn it over without tearing it and cook the other side for 20-30 seconds.

Notes

This recipe makes 4 to 5 crepes, depending on the size of your pan.
Note: Since it varies from flour to flour, if the consistency is too watery, add another half spoon of flour. If your batter is too thick, add a tablespoon of milk.
Note: The pan should be hot enough to cook the batter quickly but not so hot that it burns.
Note: Use the minimum amount of oil to cook, remove the excess if necessary. Otherwise, the crepes will be oily and crispy on the edges.
