Even though doner is good in all its forms, iskerder kebab is something else. Iskender sauce can also be used with grilled meats, meatballs or pasta.

Ingredients
  

  • ¼ cup olive oil
  • 4 tbsp butter 50-60 g
  • 4 tbsp tomato paste
  • 1 tsp sugar
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ tsp chili pepper flakes (optional)
  • 2+½ cup hot water Approx. 500 ml. But add it by paying attention to the consistency.
  • 2 tbsp ketchup

Instructions
 

  • Put the olive oil in a saucepan and heat it. Add tomato paste. Saute until the raw smell of the tomato paste disappears.
  • Add sugar, salt, black pepper and chili pepper if you like it hot. Continue cooking while stirring.
  • After mixing the spices, add hot water and let the mixture boil. Cook on low heat for about 10 minutes.
  • Add the butter and stir until melted. Boil for another 1-2 minutes.
  • If the consistency of the sauce is too thick, you can add a little more hot water.
  • Turn off the heat, add ketchup and mix well.
  • Serve it hot.

Notes

Make sure the sauce is not too watery. It should be a thick but fluid sauce.
