Keto Coconut Macaroons

Ingredients
  

  • 4 egg whites
  • 2 tbsp granulated sweetener erythritol/monk fruit/stevia etc.
  • 2 cups desiccated coconut 70 g

Instructions
 

  • We start by beating the egg whites. If available, you can add cream of tartar with the tip of a teaspoon. Or you can add a few drops of lemon juice. Even if you don't add anything, it will foam if the egg yolk has not escaped in it.
  • Add the sweetener little by little and continue whisking until it reaches the consistency of whipped cream. Do not over-whisk as the foam may deflate.
  • After it thickens, finally add the coconut powder and mix it by turning it upside down.
  • Portion it on a parchment paper or silpat. Bake in an oven preheated to 180℃ or 350℉ until the top is golden brown.

  • According to the portion I gave, this recipe yielded 24 coconut macarons.
  • These macarons have 0.25 g net carbs each.
  • Note that this calculation will change if you dip it in chocolate.
