Ingredients
  

  • 2 kg quinces (approx. 4.4 pounds, 4 big quinces)
  • 2 kg granulated sugar
  • 2 lt water
  • Juice of 1 lemon
  • ½ tsp butter (to prevent foaming)
  • 10 cloves (optional but strongly recommended)
  • Quince seeds (to give color, optional)

Instructions
 

  • Wash the quinces well, peel them and remove their seeds. Do not throw away the seeds, you can use them to add reddish color to your jam.
  • Cut the quinces into cubes or any shape you like and place them in a pot.
  • Add the sugar, then wrap the quince seeds in a tea brewing bag and place them in the pot. (If you don’t mind seeds in the jam, you can put them in without the bag.)
  • Add enough water to cover the ingredients and bring to a boil over medium heat.
  • Once boiling, reduce the heat and cook until the quinces are soft. This process may take about 50-60 minutes.
  • When it starts to reach the consistency of jam, add the lemon juice and butter. Butter prevents the jam from foaming and gives it a shiny appearance. After boiling for a few more minutes, remove from the stove.
