Wash the quinces well, peel them and remove their seeds. Do not throw away the seeds, you can use them to add reddish color to your jam.
Cut the quinces into cubes or any shape you like and place them in a pot.
Add the sugar, then wrap the quince seeds in a tea brewing bag and place them in the pot. (If you don’t mind seeds in the jam, you can put them in without the bag.)
Add enough water to cover the ingredients and bring to a boil over medium heat.
Once boiling, reduce the heat and cook until the quinces are soft. This process may take about 50-60 minutes.
When it starts to reach the consistency of jam, add the lemon juice and butter. Butter prevents the jam from foaming and gives it a shiny appearance. After boiling for a few more minutes, remove from the stove.
