- 1 bunch parsley chopped, approx. 3 cups
- 1 bunch scallions chopped, approx. 2 cups
- 7-8 sprigs of fresh garlic or 5-6 cloves of garlic
- ½ bunch fresh dill optional
- 3 eggs
- 1 cup white flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp red pepper flakes I used Aleppo pepper
- ½ cup olive oil
- ½ tsp baking powder
- ½ tsp turmeric powder optional
Wash the vegetables in plenty of water. Finely chop all the ingredients and place them in a mixing bowl.
Add the eggs, salt, red pepper flakes, black pepper and olive oil. Then mix all the ingredients thoroughly.
Now add flour slowly. If the mixture is too dry you will need to add some water. Keep adding some flour and some water until the mixture becomes thicker than a pancake batter.
Put the mixture spoon by spoon onto the baking tray. Try not to make it too thin. Or pour it all onto a greased baking tray.
Place the tray in the oven preheated to 350ºF (180ºC) degrees. Bake with the fan on. Cook until both the bottom and the top of the fritters are golden brown.
