- We start by beating the egg whites. If available, you can add cream of tartar with the tip of a teaspoon. Or you can add a few drops of lemon juice. Even if you don’t add anything, it will foam if the egg yolk has not escaped in it.
- Add the sweetener little by little and continue whisking until it reaches the consistency of whipped cream. Do not beat too much as the foam will deflate.
- After it thickens, finally add the coconut powder and mix it by turning it upside down.
- Portion it on a parchment paper or silpat. Bake in an oven preheated to 180℃ or 350℉ until the top is golden brown.
