Vegetable Fritters recipe, in Turkish style! In fact, we call this recipe “Öcce” in Gaziantep. I cook this local delicacy, which is normally deep fried, in the oven. This way, it is both healthier and much easier to cook.
Öcce is made frequently in Gaziantep, Turkey. We prefer to eat it for breakfast, at special events or as a snack. There are lots of parsley and lots of onion in this vegetable fritters recipe. It is a known fact that there is a fondness for onion and garlic in Turkish dishes. Parsley, spring onion and fresh garlic are some of our favorite vegetables to use in our meals, especially in Gaziantep.
We have preferred to cook fritters, which is actually a type of fried food, in the oven for a long time. As a family, we decided that the fritters we cooked in the oven were better than the fried ones. Because the baked ones are much lighter and of course healthier than the fried version. Since it is easier to digest, we often make it at home and keep it as a snack. It doesn’t take much time to do either. I can say that the most difficult part of making baked vegetable fritters is chopping the vegetables.
You can eat these fritters with salsa or with yogurt.

How to Make Turkish Vegetable Fritters?
1.Step: Wash the parsley, green onions and garlic in plenty of water. If you have fresh garlic on hand, use it, otherwise use garlic cloves.
2.Step: Finely chop all the ingredients and place them in a mixing bowl.
3.Step: Add the eggs, salt, red pepper flakes, black pepper and olive oil. Then mix all the ingredients thoroughly.
4.Step: Now add flour slowly. If the mixture is too dry you will need to add some water. I gave approximate measurements in the recipe. But the amount of flour will vary depending on the amount of vegetables. Keep adding some flour and some water until the mixture becomes thicker than a pancake batter.
The vegetable fritters batter should be of a consistency that will not run away when you put them on the tray with a spoon.
5.Step: Make sure to use baking paper. Divide the mixture into a tray, one spoonful at a time. Put the mixture spoon by spoon onto the baking tray. Try not to make it too thin or it will be too dry when cooked. You can also pour it all onto a greased baking tray if you want.
6.Step: Place the tray in the oven preheated to 350ºF (180ºC) degrees. Bake with the fan on. Cook until both the bottom and the top of the fritters are golden brown.

Vegetable Fritters (Baked)
Ingredients
- 1 bunch parsley chopped, approx. 3 cups
- 1 bunch scallions chopped, approx. 2 cups
- 7-8 sprigs of fresh garlic or 5-6 cloves of garlic
- ½ bunch fresh dill optional
- 3 eggs
- 1 cup white flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp red pepper flakes I used Aleppo pepper
- ½ cup olive oil
- ½ tsp baking powder
- ½ tsp turmeric powder optional
Instructions
