Ingredients
  

  • ¼ cup olive oil
  • 1 onion
  • 3 cloves garlic
  • 3 tbsp flour
  • 1 potato small
  • 1 carrot
  • 1 cup celery root peeled and cubed
  • 1 cup milk
  • 5 cups hot water
  • 1 tsp salt

Chili Oil for Service:

  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ tsp chili powder

Instructions
 

  • Chop the vegetables you will use into small pieces. Chopping it small is to reduce cooking times.
  • Put the oil in the pot and heat it. Then add onion and garlic and saute for a few minutes.
  • Add the flour and continue cooking.
  • Add the potatoes, carrots and celery you cut into cubes. Cook them all for another 1-2 minutes. If you want to add greens such as celery stalks and parsley to the soup, add them at this stage.
  • Then add the milk to the pot. Add hot water to it. You can also use chicken broth or bone broth instead of water.
  • Add salt and wait for it to boil. After it comes to a boil, reduce the heat and cook for about 30 minutes until the vegetables soften.
  • If you want a smooth soup, puree all the vegetables with a blender at the end of the cooking time.
  • If you prefer, you can serve it with chili pepper and butter.

For Chili Oil:

  • Heat the olive oil and butter in a pan. Add red pepper powder on it.
  • Wait for 1 more minute and remove from the stove.
