- ¼ cup olive oil
- 1 onion
- 3 cloves garlic
- 3 tbsp flour
- 1 potato small
- 1 carrot
- 1 cup celery root peeled and cubed
- 1 cup milk
- 5 cups hot water
- 1 tsp salt
Chili Oil for Service:
- 1 tbsp olive oil
- 1 tbsp butter
- ½ tsp chili powder
Chop the vegetables you will use into small pieces. Chopping it small is to reduce cooking times.
Put the oil in the pot and heat it. Then add onion and garlic and saute for a few minutes.
Add the flour and continue cooking.
Add the potatoes, carrots and celery you cut into cubes. Cook them all for another 1-2 minutes. If you want to add greens such as celery stalks and parsley to the soup, add them at this stage.
Then add the milk to the pot. Add hot water to it. You can also use chicken broth or bone broth instead of water.
Add salt and wait for it to boil. After it comes to a boil, reduce the heat and cook for about 30 minutes until the vegetables soften.
If you want a smooth soup, puree all the vegetables with a blender at the end of the cooking time.
If you prefer, you can serve it with chili pepper and butter.
