- 2 cups sesame flour 180g
- 3 tbsp oat bran
- 1 tsp xanthan gum
- ¾ tsp salt
- 1 tsp baking powder
- water as much as it takes
Mix the dry ingredients first. Sesame flour, oat bran, xanthan gum, baking powder and salt are mixed well.
Add warm water to the mixture little by little. Keep adding until the dough forms. You will have a very shiny and soft dough.
Divide the dough into portions of desired size. Rolling it out between 2 sheets of baking paper or silpat, will help prevent the dough from tearing. Cook in a heated non-stick pan.
You don’t need to put oil in the pan. When the tortilla changes color, it means it is cooked. Cook for 3-4 minutes on one side. Then flip and cook for a further 5-10 seconds.
Remove the tortilla from the pan. Put it under a cloth to keep it moist.
