Zucchini Pizza Recipe
Ingredients:
- Grated zucchini: You can use the leftover zucchinis from the zucchini noodles recipe to make zucchini pizza. Be sure to squeeze out excess water from the zucchinis after grating it.
- Shredded mozzarella: I recommend using a hard cheese like aged cheddar or hard mozzarella.
- Egg: Since it is a gluten-free recipe, we will need eggs to gather the dough.
- Coconut Flour: In addition to being a ketogenic and gluten-free flour, it has high liquid absorbency. We will need a small amount for this recipe.
- Tomato Sauce: You can also use keto ketchup instead.
- Your favorite pizza toppings (mushrooms, peppers, olives, pepperoni, etc.)
- Salt, thyme, basil (optional)

How to Make Zucchini Pizza Crust?
Step 1: Preheat the oven to 180°C (350°F).
Step 2: Start by grating the zucchini. You should use the grated zucchini after squeezing out the excess water. To do this, squeeze the water out of the zucchinis as much as you can, either with your hand or with the help of a clean cloth.
As another method, you can spread the grated zucchinis on the tray and bake them in the oven for 15 minutes until the water evaporates. Use whatever method you like, then place dried zucchinis into a mixing bowl.
Step 3: Add eggs, cheddar, coconut flour and salt and mix all ingredients thoroughly.
Step 4: Place baking paper on a baking tray or you can also use a silpat. Spread the dough thinly on the silpat.
Step 5: Bake it in the preheated oven for about 15-20 minutes without adding any ingredients on it. Baking time will vary depending on the thickness of the dough. You should cook it until it is lightly browned.
Step 6: When you take the pizza crust out of the oven, put the pizza sauce and any toppings you want on it and put it back in the oven. At this stage you can increase the temperature to 200°C (400°F). Bake for about 10 minutes until the cheese melts.
Step 7: Remove from the oven and slice into slices to serve. Enjoy!
Zucchini Pizza (keto, gluten-free)
Ingredients
- 450 g grated zucchini 3 medium sized zucchinis
- 4 eggs medium
- ½ cup coconut flour 60g
- 1 tsp salt
Topping:
- I used keto ketchup, pepperoni, mushrooms and cheese.
Instructions
Zucchini Pizza Crust:
- Preheat the oven to 180°C (350°F).
- Grate the zucchini and squeeze out excess water, either by hand or with a cloth. If you don't want to bother with squeezing, spread the grated zucchini on the baking tray and cook for 15 min until the water evaporates. Place the zucchinis, which have been drained of excess water, into a mixing bowl.
- Add eggs, cheddar, coconut flour and salt. Mix all ingredients thoroughly.
- Spread the dough thinly on baking paper or silpat.
- Bake in the preheated oven for about 15-20 minutes without adding any toppings. You should cook it until it is lightly browned.
Add the Toppings:
- When you take the pizza crust out of the oven, put the pizza sauce and any toppings you want on it and put it back in the oven. At this stage you can increase the temperature to 200°C (400°F).
- Bake for about 10 minutes until the cheese melts.
Notes
- With these ingredients, you have a large thin-crust pizza the size of a baking tray.
- Each slice of the zucchini pizza crust, which consists of 12 slices, contains 2 grams of net carbs. (The toppings are not included in the carbohydrate calculation.)
