Where is the origin of Cokertme Kebab?
Cokertme kebab is actually a delicacy that has its origins in Ottoman cuisine. This kebab, which takes its name from the “cokertme” method, is prepared by combining meat and vegetables and cooking them in the oven or on the stove. Cokertme kebab, which was frequently made in the palace kitchen during the Ottoman period, became widespread among the public over time. There are different variations, especially in various regions of Anatolia.
This type of kebab, known by different names in different regions of Turkey. It differs with the unique tastes of each region. For example, Cokertme kebab, known as “Bodrum Kebab” in Bodrum, southwest of Turkey, is distinguished from others by the sauce used in its marination.
How to Make a Healthier Version?
Cokertme kebab with ground beef is a dish that will be everyone’s favorite because it is both easy to make and delicious. Although its logic is similar to yoghurt kebab, the crispy potatoes on its base add a different flavor to the dish.
For a healthier version of Cokertme kebab; instead of frying potatoes, you can choose to cook them in the oven or air fryer. How to Make Cokertme Kebab?
First, cut the potatoes into strips to the desired thickness. The thinner you chop it, the better it is. Then deep fry in hot oil. And set it aside.
If you want to make it without frying; cut the potatoes into strips, mix them with oil, salt and black pepper. Cook either in the oven or in the air fryer. I cooked them in the air fryer at 160°C/320°F for about 30 minutes. Make it 200°C/400°F to cook in the oven.
Meanwhile, prepare your garlic yoghurt.
Heat the olive oil in a pan and add the ground beef. Both beef and mutton is ok. Roast the meat until it absorbs its water and add salt, black pepper and chili pepper. If you are going to use frozen meat, put it directly into the oil-free pan, add the oil after it absorbs its water and saute for 2-3 minutes. Then add the spices.
Put the french fries on the plate first. Leave a space in the middle of the plate.
Put the yoghurt in the space you left in the middle of the plate, not on the potatoes. This way, yoghurt will not soften the potatoes.
Pour the meat mixture over the yoghurt.
You can serve cokertme kebab by garnishing it with finely chopped parsley or green pepper, if desired.
Cokertme Kebab (with French Fries)
Ingredients
- 4 medium sized potatoes
- frying oil 2 tablespoons of oil is enough for the oven or air fryer
Meat:
- 500 g ground beef
- ½ cup olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp chili pepper
Garlic Yogurt:
- 500 g yogurt If the consistency is thick, dilute with milk.
- 3 cloves garlic
- 1 pinch salt
Instructions

- To make it without frying; coat the potatoes with 1-2 tbsp of olive oil and mix with salt and black pepper. Cook either in the oven or in the air fryer. Bake in the oven at 200℃/400℉ and in the air fryer at 160℃/320℉ on the potato setting for about 30 minutes.
- Meanwhile, prepare your garlic yogurt. If the consistency of the yogurt is thick, you can dilute it with a little milk. Add the crushed garlic to the yogurt with a pinch of salt and mix.
- Heat the olive oil in a pan and add the ground beef. Roast the meat until it absorbs its water and add salt, black pepper and chili pepper. If you are going to use frozen meat, put it directly into the oil-free pan, add the oil after it absorbs its water and saute for 2-3 minutes. Then add the spices.
- Place the potatoes on the plate, leaving space in the middle. Add the yoghurt to the space you left and put the meat on top of the yoghurt.
- You can serve it by garnishing it with finely chopped parsley and/or green pepper.
