Egg Noodles (Lo Mein)

In fact, egg noodles are very similar to “erişte” in Turkish cuisine, but are slightly different in preparation. They are very delicious when cooked properly. This recipe, which I will explain step by step, is originally similar to a noodle recipe called “lo mein“. It’s a well known dish in Chinese cuisine. Of course, there are different versions of it. Apart from soy sauce, products that we are not familiar with in Turkish cuisine, such as “oyster sauce” or rice wine “mirin”, are generally used in it. That’s why this noodle recipe is not exactly a lo mein. Because the ingredients I mentioned are not in the sauce.

I can say that this super delicious egg noodles recipe I will share is a final product that I created by trying various recipes from both Korean and Chinese cuisine. It is the version that we usually make at home, that is the most practical and most delicious. I hope you will try it and love it as well.

Egg Noodles (Lo Mein) Recipe

1.Step:Start by chopping the vegetables. Finely chop the white parts of the green onion and garlic. Cut the green stems of the onion into 2-3 cm lengths and set aside. You will use them after the egg noodles are cooked.

2.Step:First, start by sautéing the sesame seeds in olive oil or sesame oil. When sesame seeds are roasted, a wonderful aroma is released. These seeds add a wonderful flavor to the dish. I recommend that you do not skip this stage.

3.Step:Sesame seeds will start to brown in a few minutes. Then add the chopped onion whites and garlic and continue to sauté.

4.Step:When the garlic turns slightly coloured, add the tomato paste and sauté.

5.Step:Add boiling water and spices to the pot. Add soy sauce, white vinegar and sugar and mix.

6.Step:Add the egg noodles, bring to a boil and reduce the heat.

How to know if noodles are cooked?

NOTE: To check whether the noodles are cooked, take one and tear off a piece. If there is any whiteness in the middle, it is still not cooked. Overcooked noodles swell and break easily. So make sure you don’t overcook as well.

7.Step:When the noodles are cooked, turn off the heat, add the green parts of the onions you prepared into the pot and stir. They will immediately soften due to the heat of the food.

8.Step:Egg noodles are now ready! Serve without delay. Don’t forget to decorate it with some sesame seeds.

You can change the ingredients according to your taste and add different vegetables and proteins. Ingredients
  

  • 3-4 tbsp olive oil or sesame oil
  • 3 cloves of garlic minced
  • 1 tbsp sesame seeds
  • 3 green onions white parts
  • 1 tsp tomato paste
  • 1 tsp pepper paste
  • hot water
  • 1 tbsp dark soy sauce or use 2 tbsp regular soy
  • 1 tsp white vinegar or apple cider vinegar
  • ½ tsp sugar
  • 1 tbsp red pepper flakes
  • ½ tsp black pepper
  • ¼ tsp ginger powder optional
  • 4–6 ounces uncooked egg noodles
  • salt if needed
  • 3 green onions green parts (cut 2-3cm long)
  • 1 pinch sesame seeds to sprinkle
