Veggie Beef Stew is a wonderful dish from beginning to end with its practicality and rich visuals. There are many stew recipes in Turkey. We generally call stew recipes as “tava”. The recipe I will share is from Gaziantep province. It is a very popular dish there. As a citizen from Gaziantep, I definitely want you to try this dish. We prefer to make this veggie and beef stew especially on weekends. It tastes the same as kebab, but it is cooked in the oven. It is also definitely healthier and more practical than kebab.

How to Make Veggie Beef Stew?

Veggie Beef Stew or Antep Tava is a meat dish cooked in the oven. It is originated in Gaziantep, where it takes its name. We usually make it with lamb/mutton, but you can also prepare it with beef. Beef tenderloin would be the best choice for this recipe.

This dish, which is blended with vegetables such as tomatoes, peppers, eggplants and onions, as well as plenty of olive oil and spices, is slowly cooked in the oven. The flavor cannot be described in words.

Veggie and beef stew recipe can be made in different ways than mine. For example; you can use less tomatoes and prepare a sauce with tomato paste and water (or beef broth) in a separate bowl for cooking. But we find it more delicious and practical to cook with just tomatoes instead of making the sauce. Apart from this, if you have time, you can marinate the meat in olive oil and black pepper beforehand. This way, the meat will soften and absorb the aroma of the spices. Again, you can increase the vegetables you like and decrease the ones you don’t. For those who like meatballs (kofta) like me, you can also use minced meat. You can change the visual, etc. It can be differentiated as long as the general outline is the same.

Veggie Beef Stew Recipe

Ingredients:

  • 2 pounds trimmed and cubed beef (originally mutton but lamb or beef can also be used. We used extra minced meat to make meatballs, completely optional)
  • 10 tomates (reduce the number if you use large size)
  • 2 green pointed peppers
  • 1 capia red pepper
  • 2 eggplants (we did not use it in this recipe)
  • 1 large potato
  • 1 onion
  • 10 cloves of garlic
  • 1/2 cup of olive oil
  • 1 tablespoon of pepper paste
  • 1 tablespoon tomato paste
  • Salt, black pepper, red pepper flakes

How to make:

1.Step: Preheat your oven to 220 degrees.

2.Step: Place the cubed meat into the cooking pot you will use.

3.Step: Cut the onion into 4 or 6 pieces depending on its size. You can cut the garlic into 2 or add it whole without chopping it.

4.Step: Chop the peppers finely and peel the eggplant in strips (if you are using them). Then cut it into cubes and add it to the mixture.

5.Step: Peel the potato and cut it into 2. Cut into thick slices or cubes.

6.Step: Chop the tomatoes into small cubes and add them to the tray. (For visual appeal, you can separate half of the tomatoes and cut them into 4 pieces, then arrange them with the potatoes and onions. Optional.)

7.Step: Add olive oil, tomato paste and spices and mix all the ingredients well, smooth the top. You can arrange the potatoes, onions and some tomatoes as in the picture to have a nice visual. (We also made extra meatballs for those who like meatballs)

8.Step: Cover the tray with aluminum foil or damp baking paper.

9.Step: Bake in the preheated oven in the middle compartment for about 1 hour. You can remove the foil in the last 15 minutes of cooking time to lightly brown the top. (If you want to cook without covering, you can turn off the top and bottom settings when the top is browned enough and select the bottom cooking setting only.)

10.Step: You can extend the time by checking whether the meat is cooked or not.
