Turkish Beef Stew

Stew pot (güveç) is a cooking dish that has a deep-rooted history in Turkish cuisine and is widely used in Middle Eastern and Mediterranean cuisine. The word “güveç” is derived from the Arabic word “gawwaz”. “Gawwaz” means “vessel” or “bowl” in Arabic. A stew pot casserole is a round or oval cooking vessel, usually with handles, in which food is cooked.

Stew pots are made from materials such as pottery, ceramics or clay. These ingredients ensure that the food is cooking evenly and preserve the flavor and nutritional value of the food by preventing the liquid inside from evaporating. Additionally, the porous structure of pots allows the water in the food to evaporate slowly, thus allowing the food to cook in its own juices.

How to Make Turkish Beef Stew?

Marinating the meat:

Step 1: In order to cook it softly, we will first marinate the meat. To do this, first clean the meat then cut it into cubes.

Step 2: Then add chili pepper, thyme, black pepper, olive oil and a little tomato and pepper paste. Also add half a tea glass of ayran, kefir, yoghurt or yoghurt water, whichever is available. Do not add salt at this stage.

Step 3: Mix all ingredients thoroughly. In order for the meat to marinate well, you need to massage the meat well with your hand. Then cover it with stretch film and let it rest in the refrigerator for 1-2 hours.

Meeting with the vegetables:

Step 4: Start chopping the vegetables when they are almost ready to cook. If the garlic is small, put it whole, and if it is large, cut it into 2 or 3 pieces. The important point is that it should be of a reasonable size.

Step 5: Finely chop the peppers. Chop the tomatoes into small cubes. Tomatoes are essential for cooking, because its juice will prevent the meat from drying out. It’s not included in this recipe, but you can use onions and mushrooms if you wish.

Step 6: Combine vegetables with meat before cooking. After adding the salt, mix well and divide into pots. You can increase the flavor by adding 1 teaspoon of butter on top.

Step 7: If you are afraid that the food will brown too much or burn while cooking, you can cover it with some dough or baking paper. Actually there is no need. We did not do it in this recipe either. Put it in the oven preheated to 180℃/350℉. Bake for 30-40 minutes. After the first 20 minutes, when the top is browned, turn on only the bottom fan of the oven.

This way you will avoid burning. As you can see in the pictures, there is no burning or overcooking. The meat was cooked very juicy and delicious.

Meat Marination:

  • 1 kg beef or mutton cubed
  • ½ cup olive oil
  • 1 tsp tomato paste
  • 1 tsp red pepper paste or more tomato paste
  • 4 tbsp buttermilk or yogurt or milk
  • ½ tsp oregano
  • ½ tsp black pepper
  • 1 tbsp chili pepper Aleppo pepper

Vegetables:

  • 1 head of garlic
  • 2 sweet red peppers capia
  • 3 green peppers
  • 2 bell peppers
  • 2 tomatoes

Latest Additions:

  • 1 tsp salt
  • 1 tsp butter
